    Friends!
After having had the opportunity to fish Florida’s waters, I’m excited to get back to our ocean (believe it or not) and begin to fillet my catches that are worth it. I caught Palometa or Pompano, Whiting, Atlantic croaker, catfish (saltwater!), snapper, blowfish (the wooooorst), and some sort of panfish, and heard that most of these were great eats, especially the Pompano/Palometa. The majority were caught in the surf :).

So I wanted to know what are your guys’ favorite fish to eat that you catch and how do you guys personally prepare them? Thanks!

Which ocean? Grouper for Florida and lingcod out here. Breaded and fried in tacos or sandwich using eggs and Italian bread crumbs.

    Hali, yellowtail, tuna, all great

There’s something about the subtle sweetness of sculpin though.

And bluegill/redear, believe it or not :)

Snapper in FL although not usually caught in surf. I'm still learning what's best in Cali.

Ocean wise Sculpin are hard to beat but Chili pepper rock cod run a really close second
In the lakes it used to be Crappie but now that I've been living where Walleye are within a couple of hours, Walleye hands down

You guys are awesome! Surf and jetty fish are what I’m going to plan in keeping over at home. Mission Beach, Silverstrand, La Jolla, anything around that general area.

Now second question, which fish need to be bled and which don’t!

Only ones I've ever bled are the tunas. I bleed them by the tail that way the heart pumps out the blood out of the meat. When you rip out the gills and heart you get a lot of blood but most of it is coming from what you don't eat

Smoked bonito, they don't last too long because I can't pace myself when eating them.
I really like the taste of yellowtail.
Overall any fish. Seafood is my favorite meals when eating out.
