Croaker is delicious. Normally, what a fish eats is a good indicator of table quality. Fish that eat mollusks and crustaceans are usually pretty damn good.

still fishing the MB every night on foot. learning more by every day

bought another rod (bait caster) to throw swimbaits and put 10# mono on it. I turned into a rats nest. Not sure if I had enough tension on the line when I spooled the reel? any thoughts? tbd.

catching sculpin of all sizes (caught 3 that were 9.5" so close to the limit!), croaker, calico, and sbb.

got tagged in the hand by a sculpin spine. they aren't lying when they say its venomous. pain + whole hand went numb.

per recommendations in this thread, keep a few of the croakers to make battered fish tacos tonight.

good work man. If you're looking for keeper sculpin I have a spot that's never failed me. Probably not a trip you'd want to make at night though....

croaker and sargo fish tacos are great. Baja style, beer battered with panko, I could eat these all day. Tiny filets so I should catch bigger fish next time...

Cook your fish whole. Not crazy at all. Small fish are best cooked whole and taken off the bone afterwards. Less waste. Deep Fried, steamed, grilled, pan fried work great.

Gut it. Scale it. Salt and pepper the inside. Slices of lemon. Fresh thyme. Or whatever herbs you have. Thin slices of garlic. Couple pads of butter. Same treatment on the outside. Wrap the whole thing in foil or parchment paper. Seal the sides. Small hole to let out steam. Oven at 400 for like 20 minutes. Depending on the size if the fish.:emoji_call_me:

Gut, scale, and roast over an open fire has always been my favorite. Barring that, oven roasted is a good way to go too. A lot easier to get all the meat.

One note on the carcasses. Save em! Either cook them down for stock, or if you are so inclined, you can use them to chum your spot the next time out. I've got some nearly picked clean tuna collars in line for my next jaunt....

Damn nice work! Croaker is also good fried whole. Just dredge it in flour and seasoning. I like seasoned salt and garlic, lots of paprika. Get a pan with an inch or two of oil hot (cast iron skillet works well) Then fry both sides until crispy. Mmm crispy croaker.

Also, second what AzImport said. Use the carcasses for stock or chum. Works great
