My favorite way to pan fry Corvina

    First time sharing a recipe.. forgive me for leaving out exact measurements ...

    What you will need:
    For the fish:
    Corvina
    Pan
    Canola oil
    Panko bread crumbs
    Egg wash

    Fish and sauce:
    Cajun seasoning
    Garlic powder
    Onion powder
    Ground black pepper

    Sauce only:
    Mayonnaise
    Tabasco

    Last but certainly not least english muffins

    I start out by cutting the filets into half or thirds and lay them on a paper towel.

    Put about a quarter inch of oil in the pan and cook on medium low heat

    Make the egg wash (1 egg and a little heavy cream)

    put panko into a bowl add a few pinches of Cajun, garlic powder, and onion powder... Mix together. Dont breath while you do this part or you will sneeze your brains out.

    Once those four things are done, bread the fish they should look like this 20190826_202518.jpg
    (Sorry it looks messy I had already started cooking the other pieces before I decided to take a picture. And a couple small pieces came off of the big ones, dont worry if that happens) cook each piece until they are this color 20190826_202533.jpg (yes I took a bite out of each one)

    Put a couple of English muffins in the toaster. I like half of one per piece of fish

    Now for my signature sauce. Put a couple of tablespoons of mayo into a bowl.

    Pour enough Tabasco in to make it spicy enough for yourself.. (Taste test It) It should at least be a light shade of pink when mixed or you are a pansy.

    add a few pinches of Cajun, garlic and onion powder, and pepper.

    Mix thoroughly

    Once everything is ready combine it and you will have a nice meal.

    I do a pretty similar recipe for other fish as well. I'll have to try the muffin and sauce though! You can make fish taco white sauce in a similar way...mayo, hot sauce and lime juice. Thanks for sharing
