    Alright, not fantastic.. if more people kept them, they would grow faster and get bigger in our lakes.. glwt tho..

    A friend of mine told me I didn't like bass because I had never tried one the way he cooked them. So I did. Still tasted like sh-t

    I have had LMB from lakes up north that are colder and clearer. They were good. I have had LMB from So Cal lakes too. Those had a sort of earthy flavor. The right hot sauce can fix almost anything though.

    I am guessing poaching. Way less expensive to grow tilapia than bass so probably not farm raised (and tilapia tastes pretty good).
    Hot sauce even makes it possible to choke carp down (barely though). Cooking in bacon grease (lard) helps too.

    They are farmed.. just saying.. in states where bluegill can be sold alive, the Asian markets have those too, and they are very well loved..

    Dang. The last largemouth I ate came out of Mission Trails. Not great water quality. Tasted fine. Better than many hatchery trout. That one was 2 pounds and change. I think the smaller ones, under 12 inches taste better. But the waters where those are legal to take aren"t as clean as the reservoirs.
    And yeah, LMB sre legally farmed and sold in stores. No tellin' what the bass farm pond water is like...

    I think most of the markets in So Cal get their LMB from Kent Sea Tech which has a huge facility near Palm Springs where they raise several species for market.

    LMB are raised for food in several other states too.

    I have had some pretty good carp too in some excellent Chinese restaurants in the Bay Area and back east.

    As an ex snake hunter , I used to hunt the farms a lot.. I know it sounds odd, but they had huge bug zappers above some ponds, running all night, then they would run a double gill net, anything above or under a certain size got fed off to a bigger pond, or sent to market...

    The DFW would be the best place to ask since they know the status of all our bodies of water, and which ones need more bass. They prefer you transfer specimens less than 14" because they acclimate better to the new setting, whereas the larger fish have grown too accustomed to tank life.
