Share lobster recipes

    Can you guys and gals share some of your recipes?
    I maxed out on legals last night and have the tails ready for omelettes, tacos and Mac & cheese. The heads always get split in half and added to a seafood soup. So many people discard the heads. The head holds some meat and so do the legs. Especially on the big ones.
    I took one to work to make a seafood soup and share with my coworkers.

    Is it legal to use as bait once I remove the tail at home? I imagine that you have to cut the head into manageable portions for the sheepies. Once you cut it up, what's to stop the wardens from bothering you to prove it was legal size. Regardless, what size hook would one use?

    I just used a big hook through the meat inside the head and threw it out whole on a knocker rig. Always got mine from the SI ramp trash cans. Use at least 50 lb test

    Here's how my buddies Deena Nelson and Ron Baker uses to use the lobster remnants. And the caught GOATS by using the spare parts. They would wait until they had about 12-15 lobster heads. They would thaw them out, pulverize them, stick them into an onion sack, stick the sack inside of a small bucket, and re-freeze them.

    Then they would motor out to the edge of the kelp line, tie the onion sack 6 or 7 feet op from the anchor (on the anchor line obviously) and let the current do the work for them. Then they would use whole (head and shell on) shrimp, or crayfish as bait, and drop them within a 12-15 foot radius of the boat. They would absolutely CRUSH sheephead. Her biggest was 19 pounds. GOAT!!!! And they would catch about 1/2 dozen per trip. The technique is tried and true. Save the lobster heads if you have a small boat and you're interested in trying this technique.

    BTW- I know the crayfish are fresh water. The Sheephead DO NOT care. To them, it's a tasty little crustacean. But be ready when they hit. Big sheephead hit your line like a freight train!

    I used to just put the whole head on.. put a 5/0 in the meat in the head.. don't reel until you feel the weight of the fish

    Make stock out of the heads and tail shells and freeze it. Doesn't have to be fancy; just start with some mirepoix, add the lobster, and let it cook a bit before adding water. Chuck in some herbs or spices you have lying around if you like, wine, whatever you got. Just let it simmer (not boil!), don't stir it around. Just skim off the foamy crap that rises to the top. You can use it to make bisque, risotto, paellas, stews, etc.
